Chocolate brownie
Someone gave me a block of 70% dark chocolate as a Christmas present. I tried to eat a piece but it's too bitter for me,
so I decided to make chocolate brownies out of it.
Here's the recipe I used:
75 grams flour
100 grams chocolate
half a teaspoon of baking powder
half a teaspoon of salt
60 grams butter
2 tablespoons cream
100 grams sugar
1 whole egg and one egg yolk
2 tablespoons of cold coffee.
Set the oven to gas mark 4, 180C
Put the chocolate and a couple of spoons of cream in a bowl in the microwave and melt them together.
Cream the sugar and melted butter together. Mix with a wooden spoon until soft.
Add the eggs and mix again.
Add the chocolate and cream and mix.
Add the flour, salt and baking powder and fold together with a steel spoon.
Butter the sides and bottom of a baking pan. Now add your brownie mixture.
Place in the middle of the oven and cook for twenty five minutes.
I was amazed at how well it turned out. Try it, you'll love it. My family did.

My Xmas turkey stuffing is absolutely delicious.
Take 800 grams of breadcrumbs
A 250 gram pack of dried apricots
The zest and juice of a lemon
One egg
A small bunch of spring onions, chopped.
Put all the ingredients into a food processor and blitz it up.
Place in the cavity of the turkey.
Put Sausage meat stuffing in the neck end of the bird and you're ready for the oven.
Enjoy!

Wholemeal buns
6 oz wholemeal flour, half a teaspoon of salt, half an oz yeast, 1 teaspoon sugar, small amount of warm milk,
2 oz melted butter, 1 egg.
add the yeast to warm water to froth up. Mix the salt with the flour. Warm the milk.
To the flour add yeast, sugar, milk, butter and beaten egg. Knead together and leave to rise
for a couple of hours or until it doubles in size.
Knead again, form into buns and allow to rise again.
Preheat oven to gas mark 8, 230C. Shape the buns and place in centre of the oven on a greased tray.
After ten to fifteen minutes, reduce the heat to gas mark 4, 180C. Leave for another 20 to thirty minutes.

Sponge recipe

Steamed treacle sponge. A good winter warmer that everyone loves.
2 tbsp golden syrup, plus extra for serving
115 g plain flour, sifted
1tsp baking powder
2 large eggs
115g brown sugar
75g margarine
25g unsalted butter
1tablespoon of brandy
Custard or clotted cream for serving
Thickly butter a one litre pudding basin. Place the buttered pudding basin into the fridge for a few minutes to firm up the butter.
Remove the cooled basin from the fridge and add the golden syrup.

Mix together the flour, baking powder, eggs, brown sugar, margarine, unsalted butter and brandy and stir together thoroughly.

Spoon the flour and mixture into the basin, over the golden syrup.

Take a large piece of tin foil, fold it in half and butter one side thoroughly.

Cover the pudding with the greased tin foil, leaving a fold in the foil to allow room for the pudding's expansion.

Tie string around the top of the foil.

Place the covered pudding basin in a steamer.
Steam over a medium heat for 1 hour 15minutes, making sure that the water in the steamer does not boil dry, topping up if necessary.

When the steamed pudding is cooked, turn it out from the pudding basin. Serve with golden syrup, clotted cream or custard.
Gorgeous.

Upside down apple cake
For the Cake mix you'll need;
4oz butter
2 oz soft sugar,4oz self raising flour, a teaspoon of baking powder, 2 eggs.
For the Base; 1oz butter, 1oz sugar, 2 peeled and sliced apples.
preheat oven to gas mark 6, or 200C
Cream the butter and sugar together by beating them with a wooden spoon. Add the flour and baking powder
Now Add two eggs and beat again to form a paste.
Heat 1 oz butter in an oven proof frying pan. When the butter starts to melt add the sugar and stir occasionally to form a toffee.
Toss the apple segments in the toffee to coat them. Pour the cake mix over the top and smooth it out.
Bake in the pre-heated oven for 10 to 12 minutes.
Now watch it disappear.

Welsh Cakes

You will need :
500g self raising flour
250g butter,
150g sugar,
Spices to taste. Dried fruit such as raisins, sultanas.
Rub the butter into the flour, then add the sugar, spices and fruit.
Beat an egg and add the egg to the mix
Add a tiny drop of water to make a stiff dough. Do not chill but roll out immediately and cut into circles.
Heat a flat griddle pan on the stove. When the pan is nice and hot, cook the Welsh Cakes on top. Cook dry, there is no need to add oil.
Toss in sugar.
Delicious.

Apple Crumble

Apple Crumble is the most delicious dessert you will make and it's so easy.

Peel six apples, then core and slice them.

Sprinkle with lemon juice to avoid discolouring.

Add three tablespoons of water and three of sugar.

Simmer to soften the apples.

Take off the heat and cool slightly.

For the crumble

180g plain flour

80g butter.

80g brown sugar

Mix the flour and fat to form breadcrumb consistency.

Add the brown sugar and mix. Spread the crumb over the cooled apples.

Bake in a preheated oven at gas mark 4 or 180C for 45 minutes. If the topping does not brown,

increase to gas 6 or 200C for ten minutes.
You'll be amazed at how delicious it is.

The best pie crust I've ever made, it's golden,it's crunchy and it's delicious.
Here's how you make it.
225grams plain flour
75 grams cooking margarine or butter.
100mls water.
1 egg
half a teaspoon of salt.
Put the butter in the water and bring it up to the boil.
Mix the flour and salt in a bowl and break the egg into it.
Mix it into the flour with a wooden spoon.
Add the boiling water and butter slowly, beating with the spoon until a dough is formed.
Now here's the most essential part, Put it in the refrigerator overnight or for a minimum of twelve hours.
The more time it has in the fridge, the more crystalline it will become, which is what you want.
Then roll it out for your pie crust or make it into pasties, or use it for pies.
It really is delicious.

On a Monday I love to make a chicken curry from the chicken left over from our Sunday meal. I strip the carcass of all the left over meat and keep it in the fridge while I prepare the curry. First, I put the remains of the carcass into cold water, add a teaspoon of salt and pepper and simmer it for an hour. I then pour the stock through a fine meshed sieve and discard the bones, leaving the stock for the base of my curry.
In a saucepan I melt some butter and vegetable oil and when it's bubbling I fry a chopped onion. Then I add a tablespoon of flour, mixing it thoroughly. When a paste is formed, I slowly add the chicken stock until it's a nice, smooth consistency. I then top up this with the remainder of the stock and simmer it for twenty minutes to cook out the taste of flour. Now I add a dessert spoonful of vindaloo paste, hot and spicy. When this is bubbling I adjust the seasoning to my taste, adding salt, pepper, a squirt of tomato sauce, a teaspoon of sugar and a dash of Worcestershire sauce. Now I add the shredded chicken and cook for a further twenty minutes before serving. This chicken curry can be served with boiled rice, or fried potatoes, mashed potato or pasta. The possibilities are up to you, but I know that you'll love this chicken curry recipe.

My pie recipe is so easy to prepare and cook. Not only easy but cheap as well.
It feeds the family for about 50 pence a head. Kids love this pie recipe and so do adults.
You'll need:
A pack of cheap sausages. I buy the 48pence for eight pack in Morrisons superstore for this pie recipe.
A pack of bacon. Generally £2 for two packs.
Half a small cabbage.
3 potatoes.
A couple of tablespoons of chicken stock granules.
salt and pepper
Method for this pie recipe:
Fry the sausages for a few minutes in a frying pan to brown them. Take them out, then fry the chopped bacon.
Shred the cabbage and add two tablespoons of water, cover with cling film and microwave for 3 mins.
Lift the cabbage onto the bacon and mix together.
Peel and slice the potatoes. Cover the bottom of a large oven proof dish with sliced potato.
Add sliced sausage, cabbage and bacon, then more potato, sausage, cabbage and bacon.
Season each layer with salt and pepper. Keep layering and make the last layer potato.
Add boiling water to the chicken stock granules and pour into the pie recipe.
Place tin foil over the top of the dish and put it into the centre of a pre-heated oven at 160C or gas mark 3
for 1 and 1/2 hours. Uncover the pie after an hour and a half and cook for a further 15mins.
The top will be a gorgeous golden brown.
Your kids will love this pie recipe and they won't even notice that they're eating cabbage.
